Re: Steering wheel
From the photos that Burton product appears to be a hex drive "competition use only" std quick release boss that will not fit directly onto a 2cv column.
First thing to consider is what type of steering wheel you would like, wood rim classic or modern sports "D" type, Bosses for the latter are more readily available (but not with 2cv fitting so will require new drillings or an adaptor plate) . For the former then it is a case of an adaptor plate then the boss and then a bolt center conversion kit as the fixing hole radius varies not only by make but also by style of wheel.
Thus, it is feasible but not a std off the shelf purchase. Plus the depth of the boss brings the steering wheel further into the cockpit away from the dash.

Re: Steering wheel
I have the Burton QR wheel - as stated previously, it's supplied as a hex nut and QR adaptor. The hex nut needs to be welded to the top of the column and the adaptor can be bolted to any wheel hub (mine is a Motolita with a steel plate to connect the two).
Works a treat and makes entry and exit far easier - although if you want to add security, and lock your wheel in the 'boot', then you may need to rethink your tonneau cover...
